How To Make Nutty Chicken & Lemon Spaghetti

Ingredients
- 8 oz spaghetti
- 4 chicken breasts, boneless and skinless
- 1/2 cup sliced almonds
- 1/4 cup grated Parmesan cheese
- Zest and juice of 2 lemons
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Cook spaghetti according to package instructions. Drain and set aside.

Season chicken breasts with salt and pepper. In a large skillet, heat 1 tbsp olive oil over medium heat. Cook the chicken for 6-8 minutes on each side, or until cooked through. Remove from skillet and set aside.

In the same skillet, add the remaining 1 tbsp olive oil. Add minced garlic and sliced almonds, and cook for 2-3 minutes until almonds are toasted.

Add cooked spaghetti to the skillet and toss to combine with the garlic and almonds.

In a small bowl, whisk together lemon zest, lemon juice, and grated Parmesan cheese. Pour over the spaghetti mixture and toss to coat.

Slice the cooked chicken breasts and serve on top of the spaghetti. Garnish with fresh parsley.
