Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs, beaten
- 2 cups panko breadcrumbs
- Salt and pepper, to taste
- Vegetable oil, for frying
- 1 onion, diced
- 2 carrots, diced
- 2 tablespoons curry powder
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon honey
- Cooked white rice, for serving
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 375°F (190°C).

Pound each chicken breast to an even thickness, then season with salt and pepper.

Dredge the chicken in flour, shaking off any excess. Dip it in the beaten eggs, then coat it with panko breadcrumbs.

Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken until golden brown and crispy, about 2-3 minutes per side. Transfer to a baking sheet and bake for 10 minutes to ensure the chicken is cooked through.

In the same skillet, sauté the diced onion and carrots until softened, about 5 minutes.

Sprinkle curry powder and flour over the vegetables and cook for 1-2 minutes until fragrant.
