Serves:
Ingredients
- 4 boneless, skinless chicken breasts
- Juice of 3 limes
- Zest of 1 lime
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of ground cumin
- 1/2 teaspoon of chili powder
- 1/2 teaspoon of salt
- Freshly ground black pepper, to taste
Instructions
-
In a small bowl, combine the lime juice, lime zest, minced garlic, olive oil, cumin, chili powder, salt, and black pepper.
-
Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and gently massage the marinade into the chicken. Let it marinate in the refrigerator for at least 1 hour.
-
Preheat the grill or grill pan to medium-high heat. Remove the chicken from the marinade, allowing any excess marinade to drip off.
-
Grill the chicken for about 8-10 minutes per side or until it reaches an internal temperature of 165°F (75°C). Cooking time may vary depending on the thickness of the chicken breasts.
-
Remove the chicken from the grill and let it rest for a few minutes before serving. Slice the chicken and serve with your favorite sides.
