How To Make Mexican Chilli Chicken

Ingredients
- 4 chicken breasts
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeno pepper, diced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- 1 can (400g) diced tomatoes
- 1 cup chicken broth
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
- Cooked rice or tortillas (for serving)
Instructions

Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-6 minutes on each side until golden brown. Remove from skillet and set aside.

In the same skillet, add the diced onion, minced garlic, and diced bell peppers. Cook for 5 minutes until the vegetables are softened.

Add the jalapeno pepper, chili powder, cumin, paprika, and cayenne pepper. Stir well to combine.

Pour in the diced tomatoes and chicken broth. Bring to a simmer.

Return the chicken breasts to the skillet and spoon some of the sauce over them. Cover and simmer for 15-20 minutes until the chicken is cooked through.

Serve the Mexican Chilli Chicken over cooked rice or with warm tortillas. Garnish with fresh cilantro and serve with lime wedges.
