How To Make Massaman Curry Roast Chicken

Ingredients
- 1 whole chicken (about 4 lbs)
- 2 tbsp Massaman curry paste
- 1 tbsp vegetable oil
- 1 cup unsweetened coconut milk
- 1 cup chicken broth
- 2 tbsp fish sauce
- 2 tbsp palm sugar
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 potatoes, peeled and diced
- 1 carrot, sliced
- 1 red bell pepper, sliced
- 1 cup roasted peanuts
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, combine the Massaman curry paste and vegetable oil. Rub the mixture all over the chicken, making sure to coat it evenly.

Place the chicken on a roasting rack in a baking dish. Roast in the preheated oven for 1 hour or until the internal temperature reaches 165°F (75°C).

In a large saucepan, heat the coconut milk, chicken broth, fish sauce, palm sugar, onion, garlic, and ginger over medium heat. Simmer for 10 minutes.

Add the potatoes, carrot, and red bell pepper to the saucepan. Cook for another 10 minutes or until the vegetables are tender.

Once the chicken is cooked, remove it from the oven and let it rest for 10 minutes.

Carve the chicken and serve with the Massaman curry sauce. Garnish with roasted peanuts and fresh cilantro.
