How To Make Lemon-Spiced Chicken with Chickpeas

Ingredients
- 4 boneless, skinless chicken breasts
- 1 lemon, zested and juiced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup chicken broth
- Fresh cilantro for garnish
Instructions

In a small bowl, mix together the lemon zest, lemon juice, cumin, coriander, paprika, turmeric, salt, and black pepper.

Place the chicken breasts in a shallow dish and pour the spice mixture over them, making sure to coat them evenly.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side, or until they are cooked through and golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Cook for about 2-3 minutes until the onion is softened and translucent.

Add the chickpeas and chicken broth to the skillet. Bring to a simmer and cook for 5 minutes, allowing the flavors to blend together.

Return the cooked chicken breasts to the skillet and simmer for an additional 5 minutes, until the chicken is heated through.

Serve the lemon-spiced chicken with chickpeas over cooked rice or quinoa. Garnish with fresh cilantro.
