How To Make Leftover Chicken Croquettes

We could all do better by cutting down on food waste. If leftovers can’t be helped, you can still save the scraps by transforming them into whole new dishes altogether! Ingredients

  • 2 cups of leftover cooked chicken, shredded
  • 1/4 cup of breadcrumbs
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of mayonnaise
  • 1/4 cup of chopped parsley
  • 1/4 cup of chopped onion
  • 1 garlic clove, minced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1/4 teaspoon of paprika
  • 1/4 cup of flour
  • 1 egg, beaten
  • Vegetable oil for frying

Instructions

  1. In a bowl, combine the shredded chicken, breadcrumbs, Parmesan cheese, mayonnaise, parsley, onion, garlic, salt, pepper, and paprika. Mix well.

  2. Shape the mixture into small croquettes.

  3. Roll each croquette in flour, dip in beaten egg, and then coat with breadcrumbs.

  4. Heat vegetable oil in a frying pan over medium heat.

  5. Fry the croquettes until golden brown and crispy on all sides, about 3-4 minutes per side.

  6. Remove from the pan and place on a paper towel-lined plate to drain excess oil.

  7. Serve hot with your favorite dipping sauce.
