How To Make Hunter’s Chicken

Ingredients
- 4 chicken breasts
- 8 slices of bacon
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can (400g) diced tomatoes
- 1 cup chicken broth
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 350°F (180°C).

In a large oven-safe skillet, cook the bacon until crispy. Remove and set aside, leaving the bacon grease in the skillet.

Season the chicken breasts with salt and pepper, then sear them in the bacon grease over medium-high heat until browned on both sides. Remove and set aside.

In the same skillet, sauté the onion and garlic until tender.

Stir in the diced tomatoes, chicken broth, tomato paste, oregano, thyme, salt, and pepper. Bring to a simmer.

Return the chicken breasts to the skillet, ensuring they are covered with the sauce.

Crumble the cooked bacon over the top.

Cover the skillet with a lid or aluminum foil and transfer to the preheated oven.

Bake for 45 minutes, then remove the lid/foil and bake for an additional 15 minutes to brown the chicken.

Garnish with fresh parsley before serving.
