Ingredients
- 1 whole chicken (about 4 pounds)
- 4 cloves of garlic, minced
- 2 lemons, juiced
- 2 tablespoons of olive oil
- 1 tablespoon of dried oregano
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of paprika
- 1/2 teaspoon of dried thyme
Instructions

Preheat the oven to 375°F (190°C).

In a small bowl, mix together the minced garlic, lemon juice, olive oil, dried oregano, salt, black pepper, paprika, and dried thyme.

Place the chicken in a roasting pan and generously rub the garlic mixture all over the chicken, including the cavity.

Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with the juices every 30 minutes.

Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
