Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1 avocado, sliced
- 1/4 cup crumbled feta cheese
- Juice of 1 lemon
- 2 tablespoons extra virgin olive oil
Instructions

Preheat the grill or grill pan over medium-high heat.

In a small bowl, mix together the olive oil, dried oregano, salt, and pepper. Brush the chicken breasts with the mixture.

Grill the chicken for about 4-5 minutes per side, or until cooked through. Remove from the grill and let it rest for a few minutes. Slice into thin strips.

In a large salad bowl, combine the mixed salad greens, cucumber, cherry tomatoes, red onion, Kalamata olives, avocado, and crumbled feta cheese.

In a small bowl, whisk together the lemon juice and extra virgin olive oil. Drizzle the dressing over the salad and toss to combine.

Divide the salad among four plates and top with the grilled chicken.
