How To Make Golden Roast Chicken with Sweetcorn, Sage & Garlic

Ingredients

  • 1 whole chicken (about 4 pounds)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 2 tablespoons fresh sage leaves, chopped
  • 2 cups sweetcorn kernels
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Pat the chicken dry with paper towels. Rub the chicken with olive oil, salt, and pepper, making sure to coat it evenly.

  3. In a small bowl, mix together the minced garlic and chopped sage leaves. Rub this mixture all over the chicken, including the cavity.

  4. Place the chicken in a roasting pan and scatter the sweetcorn kernels around it. Place the lemon slices on top of the chicken.

  5. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the thigh.

  6. Remove the chicken from the oven and let it rest for 10 minutes before carving.

  7. Serve the roast chicken with the sweetcorn, sage, and garlic, and enjoy!
