How To Make Golden Roast Chicken with Sweetcorn, Sage & Garlic

Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 2 tablespoons fresh sage leaves, chopped
- 2 cups sweetcorn kernels
- 1 lemon, sliced
Instructions

Preheat the oven to 375°F (190°C).

Pat the chicken dry with paper towels. Rub the chicken with olive oil, salt, and pepper, making sure to coat it evenly.

In a small bowl, mix together the minced garlic and chopped sage leaves. Rub this mixture all over the chicken, including the cavity.

Place the chicken in a roasting pan and scatter the sweetcorn kernels around it. Place the lemon slices on top of the chicken.

Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer inserted into the thickest part of the thigh.

Remove the chicken from the oven and let it rest for 10 minutes before carving.
