Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into cubes
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp salt
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 tbsp soy sauce
- 2 tbsp lime juice
- Fresh cilantro, for garnish
Instructions

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent, about 5 minutes.

Add the chicken cubes to the skillet and cook until they are browned on all sides, about 5 minutes.

In a small bowl, mix together the curry powder, cumin, turmeric, paprika, and salt. Sprinkle the spice mixture over the chicken and onions, stirring well to coat.

Pour in the coconut milk, chicken broth, soy sauce, and lime juice. Stir to combine and bring the mixture to a simmer.

Reduce the heat to low and cover the skillet. Let the curry simmer for 20 minutes, or until the chicken is cooked through and tender.

Serve the chicken curry over steamed rice or with naan bread. Garnish with fresh cilantro.
