How To Make Chorizo Chicken with Chilli Wedges

Ingredients
- 4 chicken breasts
- 200g chorizo, sliced
- 2 red bell peppers, sliced
- 1 red onion, sliced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper, to taste
- 4 large potatoes, cut into wedges
- 1 tsp chili flakes
Instructions

Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.

In a large bowl, toss the potato wedges with olive oil, salt, pepper, and chili flakes. Place them on the baking sheet and bake for 25 minutes or until crispy.

Meanwhile, season the chicken breasts with paprika, chili powder, cumin, salt, and pepper.

Heat a large skillet over medium heat and cook the chorizo until crispy. Remove from the skillet and set aside.

In the same skillet, add the chicken breasts and cook for 6-8 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet, sauté the red bell peppers, red onion, and garlic until softened.

Slice the cooked chicken breasts and add them back to the skillet along with the cooked chorizo. Mix well and cook for another 2-3 minutes.

Serve the chorizo chicken with the crispy chili wedges on the side.
