- 1 lb boneless, skinless chicken breasts
- 2 tbsp chipotle powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 8 small flour tortillas
- 1 cup diced pineapple
- 1/2 cup diced red onion
- 1 jalapeno, seeded and diced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt to taste
Instructions

In a small bowl, combine chipotle powder, garlic powder, cumin, paprika, salt, and black pepper. Rub the spice mixture all over the chicken breasts.

Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 4-5 minutes per side or until cooked through. Remove from heat and let it rest for a few minutes before slicing.

While the chicken is resting, prepare the pineapple salsa. In a bowl, combine diced pineapple, red onion, jalapeno, cilantro, lime juice, and salt. Mix well.

Heat the flour tortillas in a separate skillet until warm.

Slice the cooked chicken breasts into thin strips.

To serve, place a few chicken slices onto each warm tortilla and top with the pineapple salsa.
