Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chilli powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced
- 1 lime, juiced
- 2 tablespoons olive oil
Instructions

Preheat grill or grill pan over medium-high heat.

In a small bowl, combine olive oil, chilli powder, garlic powder, salt, and pepper.

Brush chicken breasts with the chilli powder mixture.

Grill chicken for 6-8 minutes per side, or until cooked through.

Remove chicken from grill and let it rest for 5 minutes, then slice into thin strips.

In a large bowl, combine salad greens, cherry tomatoes, corn, red onion, cilantro, and avocado.

In a separate small bowl, whisk together lime juice and olive oil to make the dressing.

Pour dressing over the salad and toss to combine.

Top the salad with sliced grilled chicken.
