How To Make Chilli-lime chicken salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chilli powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • 1 lime, juiced
  • 2 tablespoons olive oil

Instructions

  1. Preheat grill or grill pan over medium-high heat.

  2. In a small bowl, combine olive oil, chilli powder, garlic powder, salt, and pepper.

  3. Brush chicken breasts with the chilli powder mixture.

  4. Grill chicken for 6-8 minutes per side, or until cooked through.

  5. Remove chicken from grill and let it rest for 5 minutes, then slice into thin strips.

  6. In a large bowl, combine salad greens, cherry tomatoes, corn, red onion, cilantro, and avocado.

  7. In a separate small bowl, whisk together lime juice and olive oil to make the dressing.

  8. Pour dressing over the salad and toss to combine.

  9. Top the salad with sliced grilled chicken.

  10. Serve immediately.
