How To Make Chicken with Saffron, Raisins & Pine Nuts

Ingredients
- 4 chicken breasts, boneless and skinless
- 1 teaspoon saffron threads
- 1/4 cup hot water
- 1/2 cup raisins
- 1/4 cup pine nuts
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

In a small bowl, combine the saffron threads and hot water. Let it steep for 10 minutes.

In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.

In the same skillet, add the raisins, pine nuts, paprika, cumin, coriander, salt, and pepper. Cook for 2 minutes, stirring occasionally.

Return the chicken breasts to the skillet and pour in the saffron water. Cover the skillet and cook for about 20 minutes, or until the chicken is cooked through and tender.

Serve the chicken with saffron sauce over rice or couscous. Garnish with fresh cilantro.
