Ingredients
- 4 chicken breasts
- 1 cup of mascarpone cheese
- 1/4 cup of fresh herbs (such as parsley, thyme, and rosemary), finely chopped
- 2 cloves of garlic, minced
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions

Preheat oven to 375°F (190°C).

In a bowl, mix together mascarpone cheese, fresh herbs, garlic, salt, and pepper until well combined.

Make a slit in each chicken breast to create a pocket for the filling, being careful not to cut all the way through.

Stuff each chicken breast with the herby mascarpone mixture.

Heat some olive oil in an oven-safe skillet over medium-high heat.

Sear the stuffed chicken breasts for 2-3 minutes on each side, until golden brown.

Transfer the skillet to the preheated oven and bake for 18-20 minutes, or until the chicken is cooked through and the filling is melted and bubbly.

Remove from the oven and let the chicken rest for a few minutes before serving.
