Ingredients
- 2 boneless, skinless chicken breasts, sliced
- 8 ounces of rice noodles
- 2 tablespoons of vegetable oil
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 cup of snap peas
- 1/4 cup of black bean sauce
- 2 tablespoons of soy sauce
- 1 tablespoon of cornstarch
- 1/4 cup of water
- Salt and pepper, to taste
- Chopped green onions, for garnish
Instructions

Cook the rice noodles according to package instructions. Drain and set aside.

In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the sliced chicken to the skillet and cook until browned and cooked through.

Add the red bell pepper and snap peas to the skillet and cook for an additional 2-3 minutes until slightly softened.

In a small bowl, whisk together the black bean sauce, soy sauce, cornstarch, water, salt, and pepper. Pour the sauce over the chicken and vegetables in the skillet.

Cook for another 2-3 minutes until the sauce thickens and coats the chicken and vegetables.

Add the cooked rice noodles to the skillet and toss to coat everything evenly in the black bean sauce.

Garnish with chopped green onions and serve hot.
