- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup cornstarch
- 1/4 cup vegetable oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small onion, diced
- 1 cup pineapple chunks
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions

In a bowl, toss the chicken pieces with cornstarch until evenly coated.

Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until golden and crispy, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add the bell peppers and onion. Cook until slightly softened, about 2-3 minutes.

In a separate bowl, mix together ketchup, rice vinegar, soy sauce, brown sugar, cornstarch, and water until well combined.

Pour the sauce mixture into the skillet with the bell peppers and onion. Stir well and bring to a simmer.

Add the pineapple chunks and cooked chicken back to the skillet. Stir to coat the chicken and vegetables with the sauce. Cook for an additional 2-3 minutes, until everything is heated through.
