- 4 spring chicken pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 2 sprigs of fresh rosemary
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup chicken broth
- Fresh parsley for garnish

In a large pot, heat olive oil over medium heat. Add the spring chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.

In the same pot, add the chopped onion and minced garlic. Sauté until fragrant and translucent.

Add the sliced red and yellow bell peppers, zucchini, and cherry tomatoes to the pot. Cook for 5 minutes, until the vegetables start to soften.

Return the chicken to the pot and add the fresh rosemary, paprika, salt, and pepper. Stir well to coat the chicken and vegetables with the seasoning.
