Serves:
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons butter
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh thyme
- Salt and pepper, to taste
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
-
Preheat the oven to 400°F (200°C).
-
In a large skillet, melt the butter over medium heat. Add the mushrooms and garlic, and cook until the mushrooms are tender, about 5 minutes. Stir in the thyme, salt, and pepper. Remove from heat and set aside.
-
Season the chicken breasts with salt and pepper. In the same skillet, cook the chicken breasts over medium-high heat until browned on both sides, about 3 minutes per side. Remove from heat and set aside.
-
On a lightly floured surface, roll out the puff pastry to about ¼ inch thick. Cut into 4 squares, large enough to wrap each chicken breast.
-
Place a chicken breast on each puff pastry square. Spoon the mushroom mixture over the chicken breasts.
-
Fold the puff pastry over the chicken and mushrooms, pressing the edges to seal. Place the Wellingtons on a baking sheet lined with parchment paper, seam side down.
-
Brush the tops of the Wellingtons with the beaten egg.
-
Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the chicken is cooked through.
-
Remove from the oven and let rest for a few minutes before serving.
-
Serve the Chicken Wellingtons with a side of vegetables or a salad. Enjoy!
