Savory chicken thighs cooked with mushrooms in a Dutch oven – a comforting and filling meal for any occasion.

Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tbsp unsalted butter
- 8 oz sliced mushrooms
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp dried thyme
- 1 tbsp cornstarch
- 2 tbsp water
Instructions

Preheat the oven to 375°F.

Heat olive oil in a Dutch oven over medium-high heat.

Season the chicken with salt, pepper, and garlic powder.

Brown the chicken on both sides until golden brown, about 5 minutes each side.

Remove chicken from the Dutch oven and set it aside.

Melt butter in the same Dutch oven.

Add sliced mushrooms and minced garlic and cook for 5 minutes or until the mushrooms have browned and the garlic has become fragrant.

Add chicken broth and dried thyme and bring to a boil.

Reduce heat to a simmer and return chicken to the Dutch oven. Cover with a lid.

Bake in the preheated oven for 30-35 minutes or until chicken is cooked through.

Remove chicken from the Dutch oven and set it aside on a plate.

In a small bowl, mix cornstarch and water until smooth.

Return the Dutch oven to medium heat and whisk the cornstarch mixture into the mushroom sauce.

Bring the sauce to a boil and let it simmer for 2-3 minutes or until thickened.

Serve the chicken thighs with mushroom sauce on top.
