How To Make Dutch Oven Mediterranean Chicken Recipe
A flavorful one-pot meal with chicken, vegetables, and Mediterranean spices.

Ingredients
- 4 chicken thighs
- 1 red onion, sliced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 can of diced tomatoes
- 3 cloves of garlic, minced
- 1 tbsp of dried oregano
- 1 tbsp of dried basil
- 1 tsp of paprika
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 2 tbsp of olive oil
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 350°F (175°C).

Season the chicken thighs with salt, pepper, and paprika.

In a Dutch oven, heat the olive oil over medium-high heat.

Sear the chicken for 4-5 minutes on each side until golden brown.

Remove the chicken and set it aside.

In the same Dutch oven, sauté the onion, bell pepper, zucchini, and garlic until they are tender.

Add the canned tomatoes, oregano, basil, salt, and pepper to the vegetables and stir well.

Place the chicken thighs on top of the vegetable mixture in the Dutch oven.

Cover the pot and bake for 45-50 minutes until the chicken is cooked through.

Garnish with fresh parsley and serve hot.
