How To Make Cast Iron Skillet Greek Chicken

A flavorful and juicy chicken dish cooked in a cast iron skillet with Greek-inspired spices and ingredients.

Ingredients

  • 4 chicken breasts
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F.

  2. In a small bowl, combine the oregano, thyme, basil, garlic powder, salt, and pepper.

  3. Rub the spice mixture all over the chicken breasts.

  4. Heat a cast iron skillet over medium-high heat.

  5. Add the chicken to the skillet and cook for 3-4 minutes on each side, until browned.

  6. Remove the chicken from the skillet and set aside.

  7. Add the sliced bell pepper and onion to the skillet and cook for 2-3 minutes, until softened.

  8. Add the lemon juice, olive oil, and chicken broth to the skillet and stir to combine.

  9. Return the chicken to the skillet and spoon some of the sauce over the top.

  10. Bake in the preheated oven for 20-25 minutes, until the chicken is cooked through.

  11. Garnish with chopped parsley before serving.
