- 1 cup chopped kale
- 1 cup chopped spinach
- 1 cup chopped broccoli
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
-
Preheat your grill or grill pan over medium-high heat.
-
Season the chicken breasts with Cajun seasoning, salt, and pepper.

Drizzle the chicken breasts with olive oil, ensuring they are well coated.

Grill the chicken for 6-8 minutes per side, or until cooked through.
-
Meanwhile, rinse the quinoa under cold water and drain well.

Fluff the cooked quinoa with a fork and add it to the skillet with the greens. Stir in the chopped parsley and season with salt and pepper to taste.
-
Serve the Cajun blackened chicken on top of the supergreen quinoa.
