Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup couscous
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- 2 tablespoons olive oil
- Fresh parsley, for garnish
Instructions

In a large skillet, heat the olive oil over medium heat.

Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-6 minutes on each side, until browned and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the diced onion, minced garlic, red bell pepper, and zucchini. Cook for 5 minutes, until the vegetables are softened.

Stir in the cumin, paprika, turmeric, salt, and black pepper. Cook for 1 minute, until the spices are fragrant.

Add the couscous and chicken broth to the skillet. Stir to combine.

Return the chicken breasts to the skillet, nestling them into the couscous mixture.

Cover the skillet and reduce the heat to low. Simmer for 10-12 minutes, until the couscous is tender and the chicken is heated through.

Remove the skillet from the heat and let it sit, covered, for 5 minutes.

Fluff the couscous with a fork, then serve the chicken and couscous mixture hot, garnished with fresh parsley.
