How To Make Chicken & Chickpea Rice

Ingredients
- 1 cup of basmati rice
- 2 chicken breasts, cut into bite-sized pieces
- 1 can of chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of cumin powder
- 1 teaspoon of paprika
- 1/2 teaspoon of turmeric powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Rinse the rice under cold water until the water runs clear, then cook it according to the package instructions.

Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and cook until softened.

Add the chicken pieces to the skillet and cook until browned on all sides.

Stir in the cumin powder, paprika, turmeric powder, salt, and pepper. Cook for another 1-2 minutes.

Add the drained chickpeas to the skillet and cook for another 5 minutes, allowing the flavors to combine.

Once the rice is cooked, add it to the skillet and mix well with the chicken and chickpeas.

Adjust the seasoning if needed and garnish with fresh cilantro.
