How To Make Chicken & Broccoli Potato-Topped Pie

Ingredients

  • 2 cups of cooked chicken, shredded
  • 2 cups of broccoli florets
  • 1 cup of diced potatoes
  • 1/2 cup of diced onions
  • 1/2 cup of diced carrots
  • 2 cloves of garlic, minced
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of all-purpose flour
  • 2 cups of chicken broth
  • 1/2 cup of milk
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the onions, carrots, and garlic, and sauté until they are tender.

  3. Add the flour to the skillet and cook for 1 minute, stirring constantly.

  4. Gradually whisk in the chicken broth and milk until smooth. Cook until the mixture thickens.

  5. Stir in the shredded chicken, broccoli, and salt and pepper. Cook for an additional 5 minutes, until the broccoli is slightly tender.

  6. Transfer the mixture to a greased baking dish.

  7. In a separate pot, boil the diced potatoes until they are tender. Drain and mash them with a fork or potato masher.

  8. Spread the mashed potatoes over the chicken and broccoli mixture in the baking dish.

  9. Sprinkle the shredded cheddar cheese on top.

  10. Bake for 25-30 minutes, or until the cheese is melted and bubbly.

  11. Serve hot and enjoy!
