Ingredients
- 4 chicken thighs
- 4 slices of bacon, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, sliced
- 1 can (14 oz) crushed tomatoes
- 1/2 cup chicken broth
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the drippings in the skillet.

Season the chicken thighs with salt and pepper, then add them to the skillet with the bacon drippings. Cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add the diced onion, minced garlic, and sliced bell pepper. Cook until the vegetables are softened, about 5 minutes.

Stir in the crushed tomatoes, chicken broth, dried oregano, dried basil, and red pepper flakes. Bring the mixture to a simmer.

Return the chicken thighs to the skillet, along with any juices that have accumulated. Cover the skillet and simmer for 15-20 minutes, or until the chicken is cooked through.

Serve the chicken cacciatore topped with the crispy bacon and garnished with fresh parsley.
