- 4 chicken breasts
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 2 cups black-eyed beans, cooked
- 1 red bell pepper, diced
- 1 small red onion, diced
- 1 jalapeno pepper, seeded and diced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
- 2 avocados
- Juice of 1 lime
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions

Preheat grill to medium heat.

Season chicken breasts with Cajun seasoning and drizzle with olive oil. Grill for 6-8 minutes per side, or until cooked through.

In a bowl, combine black-eyed beans, red bell pepper, red onion, jalapeno pepper, cilantro, lime juice, salt, and pepper. Mix well to combine.

In another bowl, mash avocados with lime juice. Stir in red onion, cilantro, salt, and pepper.

Serve grilled chicken with lime black-eyed bean salad and guacamole.
