Ingredients
- 4 chicken thighs, bone-in
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 can diced tomatoes
- 1 can cannellini beans, drained and rinsed
- 1 cup chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Season the chicken thighs with salt and pepper.

Heat the olive oil in a large skillet over medium-high heat. Brown the chicken thighs on both sides and set aside.

In the same skillet, add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.

Add the diced tomatoes, cannellini beans, chicken broth, and dried thyme to the skillet. Stir well.

Return the chicken thighs to the skillet. Cover and simmer for 1 hour, or until the chicken is cooked through and tender.

Serve the braised chicken and beans over cooked rice or mashed potatoes.
