Ingredients
- 4 chicken breasts, boneless and skinless
- 2 cups squash, diced
- 2 cups new potatoes, halved
- 1 onion, thinly sliced
- 4 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 cup chicken broth
Instructions

Preheat the oven to 375°F (190°C).

In a large baking dish, combine the chicken, squash, new potatoes, onion, garlic, dried thyme, dried rosemary, paprika, salt, and pepper.

Drizzle the olive oil over the ingredients and toss until everything is well coated.

Pour the chicken broth into the baking dish.

Cover the dish with foil and bake for 25 minutes.

Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the potatoes are fork-tender.

Serve the casserole hot and enjoy!
