Serves:
Ingredients
- 8 oz pasta
- 2 chicken breasts, boneless and skinless, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tsp dried tarragon
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
- Fresh parsley for garnish
Instructions
-
Cook the pasta according to package instructions until al dente. Drain and set aside.
-
In a large skillet, heat olive oil over medium heat. Add the chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
-
In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
-
Pour in the chicken broth and simmer for 2 minutes, scraping the bottom of the skillet to release any browned bits.
-
Stir in the heavy cream and dried tarragon. Season with salt and pepper to taste.
-
Return the cooked chicken to the skillet and simmer for an additional 3-4 minutes until the sauce thickens slightly.
-
Add the cooked pasta to the skillet and toss to coat it in the sauce. Cook for 2-3 minutes, stirring occasionally, until the pasta is heated through.
-
Serve the chicken and tarragon pasta hot, garnished with grated Parmesan cheese and fresh parsley.
