How To Make Buckwheat Salad Recipe

Serves:
Ingredients
- 1 cup buckwheat groats
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 small red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup extra-virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- Salt and freshly ground black pepper to taste
Instructions

Rinse the buckwheat groats under running water and drain well.

In a medium saucepan, bring the water to a boil and add the buckwheat groats. Reduce the heat, cover, and simmer for 15 minutes or until tender. Drain any excess water and let cool.

In a large bowl, combine the cooled buckwheat groats with the cucumber, red bell pepper, red onion, parsley, and mint.

In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.

Pour the dressing over the salad and toss well to combine.
