Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 tbsp chives, finely chopped
- 1 3/4 cups milk
- 2 eggs
- 1/4 cup unsalted butter, melted
- 1 tbsp maple syrup
- 1 tbsp soy sauce
- 8 oz mushrooms, sliced
- 2 tbsp olive oil
Instructions

Preheat your waffle iron.

In a large mixing bowl, whisk together flour, baking powder, salt, and chives.

In a separate bowl, whisk together milk, eggs, and melted butter. Pour the wet mixture into the dry ingredients and stir until just combined.

Grease the waffle iron with non-stick spray or melted butter. Spoon the batter onto the hot iron, close it, and cook until golden brown and crispy.

While the waffles are cooking, heat olive oil in a skillet over medium heat. Add mushrooms and cook until they release their moisture and start to brown.

In a small bowl, mix together maple syrup and soy sauce. Pour the mixture over the mushrooms and cook for another 2-3 minutes, until mushrooms are coated and glossy.

Serve the chive waffles with the maple and soy mushrooms on top.
