I personally enjoy eating pancakes or waffles for breakfast since it’s a quick and easy meal, especially when I’m rushing for work. Most of the time, I just make ordinary pancakes or waffles with butter and maple syrup. But then, I wanted to try something new with my usual breakfast, so I upgraded them. I ended up with these delicious blueberry waffles that completely satisfied my sweet tooth.
This blueberry waffle recipe is made special with fresh blueberries, buttermilk, and a bit of almond extract for that rich and subtle nutty flavor. I wholeheartedly enjoyed the juicy blueberries blending with the crispiness of the golden brown waffles. These blueberry waffles had the perfect balance of sweet and tart. Each bite was such a delight that I just had to make more!
These were easy to make since I had a waffle maker. If you have those bigger sized waffle irons, then try making blueberry Belgian waffles. This type of waffles have larger and deeper grid patterns that are great for holding any toppings. Either way, any size will do! I used fresh blueberries for this recipe, but feel free to use frozen blueberries as well. Both will taste amazing when blended into the waffle batter.
After cooking it in the waffle iron, I paired these with the usual butter and maple syrup combination. However, the next time I made these blueberry waffles, I included some blueberry sauce to lightly drizzle on top. It’s definitely another delicious variation that I enjoyed and recommend as well. For a simpler topping variation, I also tried them with whipped cream and powdered sugar.
These blueberry waffles have definitely become a wonderful upgrade to my breakfast routine that I bought more blueberries. Next time, I’m not just making waffles but some homemade blueberry pancakes too!
How To Make Blueberry Waffles
Serve up a plate of these fluffy blueberry waffles, packed with tart blueberries, with a hint of almond, for a quick and easy breakfast meal!

Ingredients
- 1⅓cupfresh blueberries,or frozen (do not thaw)
- 2cupsflour,plus 1 tbsp
- 2tbspsugar
- 1½tspbaking powder
- ½tspbaking soda
- ½tspsalt
- 1½cupsbuttermilk
- 2eggs,separated
- ⅓cupbutter,melted
- ¼tspalmond extract,or 1 tsp vanilla extract
Instructions

Preheat the waffle iron according to manufacturer’s directions. Toss the blueberries with 1 tablespoon of flour and set aside.

Combine the flour, sugar, baking powder, baking soda, and salt in a medium bowl.

In a separate bowl, mix the buttermilk, egg yolks, butter, and extract. Set aside.

Place the egg whites in a stand mixer and beat on medium-high speed until stiff peaks form.

Add the egg yolk mixture to flour mixture and stir to combine. Fold in the egg whites, then the blueberries.

Grease the waffle iron and drop the batter, close the lid, and cook for about 3 to 5 minutes or until golden.

Serve warm with maple syrup or butter, and enjoy!
