Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the quinoa under cold water.

  2. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and let it simmer for about 15 minutes or until all the liquid is absorbed.

  3. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.

  4. Add the bell pepper, zucchini, mushrooms, and cherry tomatoes to the skillet. Cook for about 5 minutes or until the vegetables are tender.

  5. Stir in the cooked quinoa, cumin, paprika, salt, and pepper. Mix everything together and cook for another 2-3 minutes to let the flavors blend.

  6. Remove from heat and garnish with fresh parsley.

  7. Serve hot and enjoy!
