Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Rinse the quinoa under cold water.

In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and let it simmer for about 15 minutes or until all the liquid is absorbed.

Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.

Add the bell pepper, zucchini, mushrooms, and cherry tomatoes to the skillet. Cook for about 5 minutes or until the vegetables are tender.

Stir in the cooked quinoa, cumin, paprika, salt, and pepper. Mix everything together and cook for another 2-3 minutes to let the flavors blend.

Remove from heat and garnish with fresh parsley.
