Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions

Rinse the quinoa under cold water and drain well.

In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 2 minutes until fragrant.

Add the bell pepper, zucchini, cherry tomatoes, oregano, basil, salt, and black pepper. Cook for 5-7 minutes until the vegetables are tender.

Stir in the cooked quinoa and cook for an additional 2 minutes to heat everything through.

Remove from heat and garnish with fresh parsley.
