Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 zucchini, diced
- 2 tbsp curry powder
- 1 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Rinse the quinoa under cold water and set aside.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant.

Add the bell pepper, carrot, and zucchini, and cook for another 5 minutes.

Add the quinoa to the pot and stir to coat it with the vegetables and oil.

Add the vegetable broth, curry powder, turmeric, cumin, paprika, salt, and pepper. Stir well to combine.

Bring the mixture to boil, then reduce the heat to low and cover the pot. Simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.

Fluff the quinoa with a fork and garnish with fresh cilantro before serving.
