- 1 pre-made vegan pie crust
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 cup firm tofu, crumbled
- 1/2 cup unsweetened almond milk
- 2 tablespoons nutritional yeast
- 1 tablespoon cornstarch
- 1 teaspoon garlic powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions

Preheat the oven to 375°F (190°C).

Place the pie crust in a pie dish and set aside.

In a large bowl, combine the chopped spinach, cherry tomatoes, crumbled tofu, almond milk, nutritional yeast, cornstarch, garlic powder, turmeric, salt, and black pepper. Mix well.

Pour the mixture into the pie crust and spread it evenly.

Bake for 45 minutes or until the filling is set and the crust is golden brown.
