  • You can make the batter in a blender. Simply put all ingredients in, liquids first, blitz, and the pancake batter is ready in seconds.
  • Rest the batter. This rest time allows the starches to swell and the baking powder to react. As a result, it forms bubbles that make pancakes light. Aim for at least 10 minutes to 4 days ahead. Keep the batter in the fridge in a sealed container.

  5. Brush the skillet with butter. Then, place ¼ cup of batter into the pan and swirl it around to spread. Cook for 30 to 45 seconds on each side.

  6. Repeat till all the batter is used up.
