How To Make Sweet Potato Pancakes with Orange & Grapefruit

Ingredients
- 2 medium sweet potatoes, peeled and grated
- 1 orange, zested
- 1 grapefruit, juiced
- 2 eggs
- 1/2 cup flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 tbsp butter, melted
- Maple syrup, for serving
Instructions

In a large mixing bowl, combine the grated sweet potatoes, orange zest, grapefruit juice, eggs, flour, baking powder, cinnamon, nutmeg, and salt. Mix well until all ingredients are incorporated.

Heat a non-stick skillet or griddle over medium heat. Brush with melted butter.

Scoop about 1/4 cup of the sweet potato mixture onto the skillet and flatten slightly with a spatula. Cook for about 3-4 minutes on each side, until golden brown and cooked through.

Repeat with the remaining sweet potato mixture, adding more butter to the skillet as needed.

Serve the sweet potato pancakes warm with maple syrup.
