How To Make Spinach Protein Pancakes

Ingredients
- 2 cups spinach, cooked and chopped
- 4 eggs
- 1 cup cottage cheese
- 1/2 cup rolled oats
- 1/4 cup almond flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking spray
Instructions

In a blender, combine the spinach, eggs, cottage cheese, rolled oats, almond flour, baking powder, salt, and black pepper. Blend until smooth.

Heat a non-stick skillet over medium heat and lightly coat with cooking spray.

Pour 1/4 cup of the batter onto the skillet for each pancake.

Cook for about 2 minutes on each side, or until golden brown.

Repeat with the remaining batter.

Serve the spinach protein pancakes warm with your favorite toppings, such as Greek yogurt or sliced avocado.
