How To Make Shredded Sesame Chicken Pancakes with Spiced Plum Sauce

Serves:

Ingredients

  • 2 cups of cooked and shredded chicken
  • 1 cup of all-purpose flour
  • 1/2 cup of milk
  • 2 eggs
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • 2 tbsp of sesame seeds
  • Cooking spray or vegetable oil, for frying
  • 1 cup of plum sauce
  • 1 tsp of soy sauce
  • 1/2 tsp of ground ginger
  • 1/4 tsp of garlic powder
  • 1/4 tsp of red chili flakes (optional)

Instructions

  1. In a mixing bowl, combine the flour, milk, eggs, baking powder, and salt. Whisk until smooth.

  2. Heat a non-stick skillet or frying pan over medium heat. Spray with cooking spray or add a small amount of vegetable oil.

  3. Pour 1/4 cup of the batter onto the skillet, tilting the pan to spread the batter evenly. Cook for about 2 minutes or until bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.

  4. In a separate skillet, heat a small amount of vegetable oil over medium heat. Add the shredded chicken and cook until heated through.

  5. In a small saucepan, combine the plum sauce, soy sauce, ground ginger, garlic powder, and red chili flakes (if using). Cook over low heat for 5-7 minutes, stirring occasionally.

  6. To serve, place a pancake on a plate, top with a portion of shredded chicken, and drizzle with the spiced plum sauce. Sprinkle with sesame seeds.

  7. Repeat with the remaining pancakes, chicken, and sauce.

  8. Serve hot and enjoy!
