How To Make Ricotta Pancakes with Oranges & Honey

Ingredients
- 1 cup ricotta cheese
- 2 large eggs
- 1/4 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- zest of 1 orange
- juice of 1/2 orange
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 tbsp butter, melted
- 2 oranges, peeled and segmented
- honey, for drizzling
Instructions

In a large bowl, whisk together ricotta cheese, eggs, flour, sugar, baking powder, salt, orange zest, orange juice, milk, vanilla extract, and melted butter until smooth.

Heat a large non-stick skillet or griddle over medium heat.

Pour 1/4 cup of batter onto the skillet and spread it into a round shape.

Cook for 2-3 minutes until bubbles appear on the surface, then flip and cook for another 2-3 minutes until golden brown.

Repeat with the remaining batter.

Serve the pancakes topped with orange segments and drizzle with honey.
