Serves:
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter
- Cooking spray or extra butter for greasing
Instructions
-
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
-
In a separate bowl, beat the eggs, then stir in the milk and melted butter.
-
Pour the wet mixture into the dry ingredients and stir until just combined. It’s ok if there are a few lumps.
-
Preheat a non-stick skillet or griddle over medium heat. Spray with cooking spray or melt a small amount of butter to grease the surface.
-
Ladle the batter onto the skillet, using about 1/4 cup for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, until golden brown.
-
Transfer the cooked pancakes to a plate and keep warm. Repeat with the remaining batter.
-
Serve the pancakes warm with your favorite toppings like maple syrup, fruit, or whipped cream.
