Serves:
Ingredients
- 3/4 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup milk
- 4 large eggs
- 1 cup shredded cheddar cheese
- 4 slices of ham, chopped
- 2 tbsp chopped fresh chives
- 2 tbsp unsalted butter
Instructions
-
Preheat the oven to 425°F (220°C). Place a 12-inch cast iron skillet or oven-safe pan in the oven to preheat as well.
-
In a medium bowl, whisk together the flour, salt, and black pepper. In a separate bowl, whisk together the milk and eggs until well combined.
-
Gradually pour the milk mixture into the flour mixture, whisking constantly to avoid lumps.
-
Carefully remove the hot skillet from the oven and add the butter, swirling it around until melted and coating the bottom.
-
Pour the batter into the hot skillet and sprinkle the shredded cheese, chopped ham, and fresh chives evenly over the top.
-
Return the skillet to the oven and bake for about 15 minutes, or until the pancake is puffed up, golden brown, and cooked through.
-
Remove from the oven and let it cool for a minute before slicing into wedges.
-
Serve hot and enjoy!
