How To Make Coconut & Banana Pancakes

Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup shredded coconut
- 1 ripe banana, mashed
- 1 1/2 cups coconut milk
- 2 eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Stir in the shredded coconut.

In a separate bowl, mix together the mashed banana, coconut milk, eggs, melted butter, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Heat a lightly greased griddle or non-stick skillet over medium heat.

Scoop 1/4 cup of batter onto the griddle for each pancake.

Cook until bubbles form on the surface, then flip and cook until golden brown.

Serve warm with your favorite toppings such as sliced bananas, coconut flakes, or maple syrup.
