Serves:
Ingredients
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 large egg
- 2 tbsp melted butter
- 4 slices ham
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- Maple syrup, for serving (optional)
Instructions
-
In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
-
In a separate bowl, combine milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.
-
Heat a lightly greased non-stick skillet over medium heat. Pour 1/4 cup of the pancake batter onto the skillet and spread into a thin, even circle.
-
Cook the pancake for 2-3 minutes, or until the edges start to look set and bubbles form on the surface. Flip the pancake and cook for an additional 1-2 minutes.
-
Remove the pancake from the skillet and place a slice of ham and a sprinkle of shredded cheese on top. Roll the pancake tightly around the filling and secure with toothpicks if needed.
-
Repeat steps 3-5 with the remaining batter and filling ingredients.
-
Serve the cheese and ham pancake roll-ups warm with maple syrup on the side, if desired.
