Ingredients
- 6 eggs
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 tsp chili powder
- 1/4 cup onion, finely chopped
- 1/4 cup bell pepper, diced
- 1/4 cup tomato, diced
- 1/4 cup coriander leaves, chopped
- 1 avocado, diced
- 1/4 cup lime juice
- 1/4 cup red onion, finely chopped
- 1/4 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a bowl, whisk together the eggs, salt, black pepper, turmeric powder, cumin powder, and chili powder.

Heat a non-stick skillet over medium heat and spray with cooking spray.

Add the onion, bell pepper, and tomato to the skillet and sauté for 2-3 minutes until softened.

Pour the egg mixture into the skillet and cook for 3-4 minutes until the edges set.

Place the skillet in the preheated oven and bake for 12-15 minutes until the frittata is set and slightly golden.

Meanwhile, in a separate bowl, combine the diced avocado, lime juice, red onion, cherry tomatoes, and chopped coriander leaves. Mix well and season with salt and pepper.

Remove the frittata from the oven and let it cool for a few minutes.

Slice the frittata into wedges and serve with the avocado salsa on top.
